Meet Stanley Ginsberg, author of The Rye Baker and sample locally-sourced and baked breads from CBI’s Jennifer Lapidus and Scott Unfried.

In addition to The Rye Baker – the critically acclaimed baking book devoted entirely to the rye breads of Europe and America – Ginsberg is also co-author and writer of Inside the Jewish Bakery: Recipes and Memories from the Golden Age of Jewish Baking.  Stanley grew up in post World War Two Brooklyn, where he learned to bake from his grandmothers. He continued to bake during his years as a graduate student at the University of Wisconsin, and returned to it in the early 2000s as the demands of career and family wound down.He is the 2012 winner of the International Association of Culinary Professionals’ prestigious Jane Grigson Award.

Lapidus and Unfried, recently married, are both former instructors at the John C. Campbell Folk School. Lapidus is the former owner of Natural Bridge Bakery – a woodfired brick-oven bakery producing Flemish naturally leavened breads.  She currently owns and manages Carolina Ground Flour Mill, which connects farmers and bakers throughout the Southeast. Unfried  attended the California Culinary Academy in San Francisco and apprenticed with some of the Bay Area’s best bakeries before moving east and founding the Flat Rock Village Bakery in Flat Rock, NC. He is also now co-owner of Fletcher Village Bakery in Fletcher, NC, and West First Wood-Fired Pizza in downtown Hendersonville.
